Thanksgiving in August

For the past week and half, nothing sounded good to eat, so I’ve been living mostly off cereal.  Until today.  We came across a tiny turkey at the store and decided we should have a full Thanksgiving meal.  So I cooked all afternoon and this is what I came up with:

Mashed potatoes, green bean casserole, corn, rolls, turkey and stuffing!  And for dessert:

Individual pumpkin and apple pies!!  It seemed silly to buy an entire can of pumpkin filling when I only needed maybe 1/3 of it, so I made my own filling!  It was really easy!  After cooking the pumpkin, I scooped out its innards, added a bit of sugar and used my immersion blender to get it nice and smooth, then added the pumpkin pie spices/ingredients as usual.

Needless to say, we are stuffed and will have enough leftovers to last well into next week!  What sort of productive things have you been up to this weekend?
